Secret Ingredient: Bluefoot Mushrooms

One of the great things about visiting your local Farmer’s Market on a regular basis is that you start to build relationships with the farmers. Last Saturday when I bought my usual load of mushrooms from Madura Farms, John Madura slipped a few free bluefoot mushrooms into my bag. “Just saute them” he said. “Let me know what you think.” I sauteed them in olive oil until golden brown, then sprinkled a little salt and pepper on them. They tasted funky and delicious — sometimes people describe mushrooms as “earthy” and these bluefoots really showcased that. I just saw bluefoot mushrooms on sale at a market for $30/pound — I guess I was really lucky to get these few.
