Market Watch: Patty Pan Squash

Although the tubular summer squashes tend to dominate the scene, it’s the flat, wide patty pan squash that gets my vote for “most dramatic.” This particular squash, which I’ve nicknamed “Starburst,” is a large one — it’s about as wide across as my hand. I plan to cut it into wedges for cooking; there’s no real difference in flavor between these and the regular summer squashes, but you can get some cool shapes out of them.
